Exploring the Evolution of Fermentation

OUR STORY

At Ellebone Brewing, we are more than just a brewery; we are a testament to the fusion of flavor, ingenuity, and brewing excellence. Using all locally malted grain (most of which was grown in or around Tennessee) and as many locally sourced ingredients as we can, helps us to elevate our flavors even further. Our Owner and Head Brewer, Cris Ellenbecker, has over 15 years of experience in the brewing industry and has done everything from packaging beer on a bottling line, working behind the scenes with regulatory approvals, and even growing yeast in a micro biology lab. That experience has led to us being able to grow our own unique blends of yeast. Having done all of this for other companies gave him the competitive edge to start his own brewery while still not stifling his creativity. In all this he still makes time to share his skill, dedication to the craft, and knowledge with his family, and involve them as much as they can stand. Even the name Ellebone comes from his daughters' nick names.

Just like what Mamaw makes! This treat of a craft strikes a surprising resemblance to the traditional dessert while still being all that you love from a well balanced beer. With plenty of fresh banana puree and brewed with nilla wafers, we managed to capture the flavor you crave. The base beer consists of Maris Otter, White Wheat, Munich, and Lactose to capture that smooth consistency of pudding. Who doesn't want a little sweet now and then?

Unlike most of our beers, this one is as straight forward as they get. A style that originated with monks in Einbeck, comes to life in East Tennessee. This traditional Maibock hits you with notes of caramel and malt, all while still being balanced in flavor with German noble hops. If this beer doesn't make the monks want to misbehave, I don't know what would!

Sweet As Mate

New Zealand Pale Ale brewed with Orange blossom honey

This one's name has two meanings based on its New Zealand slang as well as its Maori definition. Sweet as in New Zealand means “It’s all good”. Also, the Maori word “Mate” means Death. So it can mean “It’s all good mate!” or “Sweet as Death”. Both hold true for this pale ale that uses all New Zealand hops that have notes of stone fruit and tropical fruit. The sweetness and orange flavor come from the orange blossom honey that it’s brewed with, and as always 100% Riverbend Malt House grain! Tap into your inner kiwi and take a trip with this beer while it lasts.
